My experience from other tours is to keep as many items dry as possible using waterproof bags for packing and putting my wet gear in plastic so they don't get my dry gear wet. Many people have a 'clothes line' they set up for drying gear after each day's ride. A quick drying towel like
usually drys enough between an afternoon shower and packing up in the morning.
Some rides are just wet, I found getting my shoes dry the most problematic. This year I switched to sandals with SPD cleats hoping they would dry faster than shoes.
