Hotel transportation

My first time riding this year. If you stay at a hotel, do you get transported to the campsite each day to start the ride, or do you ride directly from hotel to hotel? I noticed some of the hotels are 10-15 miles from the campsite.

I am trying to decide whether the meal plan is the way to go or to head into town. One worry is that I won't be back in time to get the meal, I am not sure how late they are open.
